5 meals under $15

Most college students try to save money in any way. These five recipes are all under $15 and include different types of meats, vegetables and sides. Most of them can be prepared in 30 minutes or less. All the products were purchased at Aldi and the prices are before tax.

  1. Chicken Fajitas
  • Kirkwood chicken tenderloins (40oz) $5.79
  • Canned black beans $0.69
  • Earthly grains rice $1.25
  • Simply Organic Salsa $1.89
  • Mexican cheese $1.99
  • Taco seasoning $0.29
  • Bell peppers $1.99

Total: $13.89

Preheat oven to 400 degrees. Season the chicken and bell peppers with taco seasoning. Place on baking sheet and bake for 25-30 minutes. Microwave rice for one minute and 30 seconds. Microwave beans for two minutes. Let the chicken cool, then cut it up and add the cheese and salsa. Serve with rice.

  1. Pasta Marinara
  • Angel hair pasta $1.69
  • Parmesan cheese $2.59
  • Marinara sauce $1.39
  • Mama cozzi garlic breadsticks $1.79
  • Italian seasoning $1.19

Total: $8.65

Bring four cups of water to a boil. Add pasta and two pinches of salt. Cook pasta for five to six minutes until fully cooked. Drain pasta. Add pasta back into the pot and add marinara sauce. Add parmesan cheese and Italian seasoning. Preheat oven to 425 degrees. Place breadsticks on baking sheet and bake for five minutes.

  1. Tuna salad sandwich

  • Salt $0.49
  • Pepper $1.79
  • Celery $1.29
  • Mayo $1.89
  • Mustard $1.19
  • Bread $0.85
  • Total: $8.49

Mix tuna with salt and pepper to taste. Add two tablespoons of mayo and half a teaspoon of mustard. Add half a stalk of diced celery. Spread on bread or serve with chips or pretzels.

  • Sharp cheddar cheese $1.99
  • Ranch $1.49
  • BBQ sauce $0.99
  • Kirkwood chicken tenderloin $5.79

Preheat oven to 400 degrees. Place chicken on baking sheet. Add salt and pepper as desired. Put diced red onion, cheddar cheese and BBQ sauce on chicken. Bake for 25-30 minutes. Put ranch, BBQ sauce and cheddar cheese on tortilla; shred and add chicken.

  1. Chicken stir-fry

  • Fusia Asian inspired teriyaki stir-fry mix $2.99

Total:  $10.07

Cut chicken into bite-sized pieces. Marinade for four hours in soy sauce, salt and pepper. Pan-fry chicken with oil or butter until lightly brown. Pan-fry teriyaki stir-fry mix with sauce packet (included). Add chicken to stir fry mix and cook on medium to low heat until chicken is golden brown.
